Ayam Goreng

Ingredients

  • 1.8 kg chicken (any parts that you desire)
  • Marinade
    • 1.5 tablespoon curry powder
    • 1 tablespoon tumeric powder
    • 1 tablespoon chilli powder
    • 0.5 tablespoon coriander powder
    • 1 tablespoon sugar
    • 2 tablespoon salt
    • 5 tablespoon cornflour
    • 2 eggs
    • Handful curry leaves
  • For Mincing with 2-3 tablespoons of water
    • 4 stalk lemongrass
    • 8 pieces chilli padi
    • 10 pieces shallots
    • 10 cloves garlic
    • 2 inch size ginger

Method

  1. Add the marinade + minced paste to the chicken and leave to marinade overnight.
  2. Take out the seasoned chicken 1 hour before frying to come to room temperature
  3. Deep fry with oil at 180 degree celsius for about 10mins (flip the chicken every 3-4 mins) until golden brown
