Mapao Tofu

Ingredients
- 250g minced pork/beef
- 1 pack of soft silken tofu
- Minced garlic & onions
- Patchun mapao tofu sauce (or any mapao tofu jar sauce works fine)
- 1 tablespoon of Hai Di Lao mala soup base (we always keep a jar of this)
- 1 cup of chicken broth
- Spring onions and coriander for garnishing
Method
- Stir fry onion and garlic until fragrant
- Add minced pork and stir fry with mapao tofu sauce
- As the minced pork begins to cook, add 1 tablespoon of Hai Di Lao mala soup base (or two if you like it with more kick! or none if mala is not up your alley)
- Cut silken tofu into cubes and add it into the pan (be careful not to break the tofu with your spatula during the stiring)
- Add chicken broth bit by bit until the sauce is watery/thick enough to your liking – let the whole pan simmer until fully cooked & serve
- Garnish with spring onions/coriander
