Banana Cake

Wet Ingredients

  • 3 eggs
  • 125g sugar
  • 200g ripe bananas (3-4 bananas)
  • 100g vegetable oil

Dry Ingredients

  • 150g cake/plain flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda


  1. Separate egg whites and yolks – whisk the egg whites until it achieves soft peaks
  2. Add in egg yolks, mashed bananas and sugar – mix until nicely combined and stop once it’s homogeneous to avoid overmixing
  3. Sift in dry ingredients and fold in
  4. Add 100g of vegetable oil and fold in until incorporated
  5. Pour into small baking paper lined bread tin
  6. Bake for 40-45mins at 160degrees until skewer comes out clean
