Banana Cake

Wet Ingredients
- 3 eggs
- 125g sugar
- 200g ripe bananas (3-4 bananas)
- 100g vegetable oil
Dry Ingredients
- 150g cake/plain flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
Method
- Separate egg whites and yolks – whisk the egg whites until it achieves soft peaks
- Add in egg yolks, mashed bananas and sugar – mix until nicely combined and stop once it’s homogeneous to avoid overmixing
- Sift in dry ingredients and fold in
- Add 100g of vegetable oil and fold in until incorporated
- Pour into small baking paper lined bread tin
- Bake for 40-45mins at 160degrees until skewer comes out clean
